The Wine
Carrasviñas El Dorado
In the Vineyard: Verdejo and Palomino Fino grapes from very old vineyards that are cultivated with esquisite care in the most traditional and sustainable way
In the winery: Harvest by hand when the grapes acquire a high level of alcohol (around 15ºC). The different varieties are vinified separately with fermentation of the base wine in stainless steel. The wines are then blended and transferred into 16-liter glass vessels (called “damajuanas” or “Demi-johns”) for 18 months. During this time the wine realizes an "oxidative aging" giving the wine a golden color, and the characteristic aromas and flavors. After the oxidative aging, the wine is transferred into oak barrels for ageing during at least two years prior to bottling
In the palate: Notes of high alcohol levels from the oxidative aging, as well as sensations provided by the oak used for aging. Nuances of nuts and roasted oak. Unctuous in the mouth with notes of glyceride and a range of oxidation- and oak ageing-derived flavors. Full-bodied with a great complexity. Long, dense and spicy.
The Producer
Bodegas Félix Lorenzo Cachazo
Founded in 1946, Bodegas Lorenzo Cachazo is about a family dedicated to making quality wines for several generations. The connection between their ancestors and their winemaking philosophy has remained intact for many years. Félix Lorenzo Cachazo started his journey in the world of wine working in one of the old underground wine cellars in the village of Pozaldez (Valladolid), giving life to the old “Amontillados” wines - a variety of sherry wines. There is little left of these strong and special wines, but we must not forget that they were the seed of today’s modern and successful Verdejo wines. Félix was one of the “inventors” of changing the winemaking style, a change that resulted in the salvation of the Verdejo grape which at that time was condemned to disappear, and the creation of the Rueda DO, with him as a founder. His son, Eduardo (the director), and daughter, Angela (the winemaker), continue this long-lasting winemaking tradition through several generations. They are all about tradition and preservation of the unique old vineyards of Rueda and work with small viticulturists with a focus to secure a centenary-old viticulture tradition with the new generations.
