Winemaking: Ancestral-Unidentified Grapes
These are centuries-old autochthonous grapes that adapt particularly well to a zone and that may have been forgotten and recently recovered in the production of quality wine. They often are particularly resistant to local diseases, as they have survived in the wild for centuries, and some are not identified, in which case the producer is allowed to name it as a new variety.
