In the Vineyard: Caiño grapes from vineyards managed in an effort of recovering ancestral varieties that have been traditional to the area but that lose protagonism with the rise and recognition of Albariño

In the winery: Extreme care is placed into the elaboration of white wine out of this red variety (a blanc the noirs), rescuing an old tradition of the area. The wine is elaborated under the principle of minimum intervention and as such is considered a natural wine, even though the skins are removed before the fermentation

In the palate: This wine has a strong reductive character that asks for opening the bottle some time before drinking the first glass. This is a wine characterized by complex notes of terroir, with minerality and saltiness taking hte protagonism over fruit. The high acidity characteristic of the grape is balanced with a good concentration of flavors and the characteristic bitterness of Galician varieties.
