The Wine

In the Vineyard: Selection of Albariño grapes from the best old vineyards of the state grown with extreme care and respect for the environment in Galician parrales.
In the winery: Manual harvested grapes, carried in small boxes, destemmed on arrival to winery. The wine undergoes cryomaceration (cold maceration), using only free-run juice must for a controlled fermentation between 18ºC and 20ºC with native yeast and aging on fine lees.
In the palate: Although discreet, it expresses the elegance of an Albariño with notes of dry eucalyptus and delicate memories of clean grass, with a fresh lemon-mandarin citrus touch, and an attractive touch of acacia flower. Its entrance in the mouth reveals the grapes from which it comes, and the souvenir of the sweet and clean must, and a long finish with a balsamic aftertaste.
