Sparkling wine is a wine with significant levels of carbon dioxide in it, making it fizzy. The are several methods of elaboration of sparkling wine, from the traditional or Champenoise method, with the second fermentation in the bottle, which is used in the elaboration of the highest quality sparkling wines (such as Champagne or Cava) to direct carbonation of still wines.
