The Wine
Malcorta 2021
In the Vineyard: The variety Verdejo Marcorta was almost extinguished but, after years of research, Javier Sanz Viticultor has managed to bring it back to use in order to craft this unique wine. It is an extremely unusual and more acidic clone of Verdejo which was no longer used due to the difficulty of its harvesting (which explains the name “Mal-corta” : Bad/difficult to cut)
In the winery: It is harvested at a perfect ripening point. Very careful winemaking, including cold maceration, juice settling for 24 hours, gravity-led racking and a slow, cold fermentation (below 15ºC) in stainless steel tanks, seeking to retain fruit aromas
In the palate: Clean and bright. It shows a pale straw yellow colour. Intense, clean and powerful aromas of blossom flowers, citrus and creamy stone fruit. Its flinty, mineral aromas provide an added complexity in the nose. Tangy acidity, crisp and refreshing. Its citrus and fruit flavours linger in the palate, leaving a nice and fresh aftertaste.

Bodegas Javier Sanz
Javier Sanz is a winemaker that likes to be called viticulturist first as he continues the tradition of five generations of winegrowers of more than 150 years. His philosophy is based on the conservation of pre-phylloxera vineyards, local grape varieties, and the recovery of varieties that have almost become extinct. Javier Sanz’s vineyards are laid out in a mosaic of plots, farms and small vineyards, all within the Valladolid municipality of La Seca. Their freshness, complexity and balance are the result of the personality of a territory, a cellar and a tradition. He follows a viticulture process that values quality over quantity thanks to the exhaustive monitoring of the health and vigor of the vineyards and a principle of minimum intervention in the winemaking process to guarantee displaying the original grape characteristics in his wines.
