The Wine
Dulce de Invierno 2020
In the Vineyard: Trellised vines grown in the village of La Seca. What is most peculiar about this wine is the blend of Verdejo and “Gorda de Moldavia” a grape of Rumanian origin, very similar to Muscat
In the winery: Dulce de Invierno is made with Verdejo and Gorda de Moldavia grapes that are frozen, late-harvested or dried. Following these 3 different methods to concentrate the sugar in the grapes we achieve two key characteristics: complexity and a high concentration of sugar (approx. 400g per liter) before the fermentation process. After fermentation the wine is further aged in French oak barrels
In the palate: A nose displaying a vast array of aromas: grape, dried apricots, nuts, a touch of citrus peel, honey. Definitely sweet, full-bodied and mouth-coating in the palate, but balanced with the right acidity and just an interesting touch of bitterness

Javier Sanz is a winemaker that likes to be called viticulturist first as he continues the tradition of five generations of winegrowers of more than 150 years. His philosophy is based on the conservation of pre-phylloxera vineyards, local grape varieties, and the recovery of varieties that have almost become extinct. Javier Sanz’s vineyards are laid out in a mosaic of plots, farms and small vineyards, all within the Valladolid municipality of La Seca. Their freshness, complexity and balance are the result of the personality of a territory, a cellar and a tradition. He follows a viticulture process that values quality over quantity thanks to the exhaustive monitoring of the health and vigor of the vineyards and a principle of minimum intervention in the winemaking process to guarantee displaying the original grape characteristics in his wines.
