The Wine
Finca Saltamontes 2017
In the Vineyard: This is an unusual single vineyard wine that we produce in limited amounts. It is made out of Verdejo grapes that grow in Pago Saltamontes, a 2,27-hectares plot dating back to 1863 and planted before the irruption of Phylloxera
In the winery: Grapes follow a short maceration process so as to enhance the aromas and freshness of the wine. After alcoholic fermentation, it follows a period of ageing on the lees with regular “batonage” or less stirring
In the palate: The nose shows aromas of sweet orange peel, fresh bread dough and some fennel and herbal notes. It is extremely soft and creamy in the palate, with a moderate acidity and a long, pleasant, finish.

Javier Sanz is a winemaker that likes to be called viticulturist first as he continues the tradition of five generations of winegrowers of more than 150 years. His philosophy is based on the conservation of pre-phylloxera vineyards, local grape varieties, and the recovery of varieties that have almost become extinct. Javier Sanz’s vineyards are laid out in a mosaic of plots, farms and small vineyards, all within the Valladolid municipality of La Seca. Their freshness, complexity and balance are the result of the personality of a territory, a cellar and a tradition. He follows a viticulture process that values quality over quantity thanks to the exhaustive monitoring of the health and vigor of the vineyards and a principle of minimum intervention in the winemaking process to guarantee displaying the original grape characteristics in his wines.
