When the principle of minimum intervention applies to wine
There is no universally accepted definition of natural wine but it is usually understood as a wine that has been elaborated without adding or removing anything in the winery from grapes that have been farmed organically, Basically, wines made under the principle of minimum intervention. This translates into fermentation of indigenous yeasts, without additives or processing aids and without fining or filtration to clarify the wine to avoid eliminating characteristic aromatic and structural characteristics intrinsic to the grape/terroir.
We present a selection of unique natural wines of author from small producers that place their hearts into making living wines with the maximum respect for the environment and tradition of their respective areas. These are wines difficult to find with productions down to 200 bottles in some cases. Ideal examples to get introduced to this new but ancient way of producing wines.
