Winemaking: Traditional Elaboration
Traditional winemaking refers to the wine elaboration practices intended to recover methods used by past generation winemakers but with the benefits provided by modern knowledge. This means different things in different regions, but may include hand-harvesting and selection in the vineyard, uses of native yeasts, perhaps foot-crushing, among others.
