Boticario de Silos Rosé Barrique 2021 (Bodegas Septién - Arlanza/Spain): Wine made from a blend of red and white grapes found in centenary old vineyards of Arlanza, located at altitudes around 1,000 meters with respect to sea level. The wine has been done by carefully bleeding the must and continuing fermentation off skins. The final wine is aged in oak barrel barriques of several uses to import gentle wood aromas and ensure structure, aromatic complexity and stability of color. This wine is both fresh and elegant, with a complex aromatic palate that replicates graciously in the palate. Complex and concentrated, it fills the mouth and provides a very long finish.

Konstantin Frank Blanc de Blanc 2019 (Dr. Konstantin Frank -Finger lakes/New York/USA): Blanc de Blanc is 100% Chardonnay from Dr. Konstantin Frank's estate vineyards on Keuka Lake. Grapes are hand harvested in early hours to maintain their freshness. The grapes are lightly pressed and the wine is elaborated in the traditional/champenoise method, with secondary fermentation in bottle for a minimum of 36 months in their historic underground cellar. Riddling is made manually. The wine shows characters of fresh pastry dough, Bartlet pear, lemon curd, and minerality. The crisp acidity and subtle mineral undertones give the wine great structure and elegance. Leading with a fine mousse, the mouthfeel is creamy and profound. Long crisp apple finish. Perfect for celebrations and special occasions. Pair with oysters, lobster, smoked salmon, fried foods, egg dishes, sushi, popcorn, or seafood-based Chinese dishes

Cava Rosat Trepat 2020 (Celler Kripta - Cava/Penedes/Spain): This rose cava is made from Trepat grapes from the Ubac estate in Sant Joan de Mediona at 500 meters of altitude in the Penedés, which is known as mountain viticulture. Vinified at the property, with a cold maceration of 8 hours and a fermentation of 28 days at a controlled temperature of 16-C with autochthonous yeast selected for the variety before the harvest to respect the grape and soil expressions as much as possible. Notes of strawberry, wild berries and cherries. An aromatic, fresh and agile cava to accompany appetizers, starters, fruits, fresh cheeses, or puff pastry sweets.

Seabold Chardonnay (Eden Rift) 2018 (Seabold Cellars - Central Coast/California/USA): Chardonnay grapes grown organically at the Seabold Cellars state. The cooling effect of the nearby mountains makes this grapes to display unique aromatic characteristics. Hand-harvested grapes at night in separate days. Upon entering the winery, the grapes were hand-sorted and very gently whole cluster-pressed. After a relatively warm native yeast fermentation in stainless steel, the wine was aged in mostly neutral barrique for 11 months. Prior to bottling, the wine was racked off its fine less, then bottled unfined and unfiltered. Low production. Cured lemon peels, sea spray, clover honey, tart nectarines, fresh apricot, “crunchy” acid profile, fresh heavy cream.

Pyjama 2020 (Bodegas Demencia - Bierzo/Spain): Mencía grapes coming from vineyards over 60 years old that are goblet-pruned. These vineyards have been recovered and transited into ecological processing during several years dedicated by viticulturist and winemaker Nacho León to recover the biodiversity that had been lost in these plots during decades of conventional viticulture for the production of bulk wine. Spontaneous fermentation with autochthonous yeast following the principles of minimum intervention. Ageing of 7 months in French oak barriques. The result is a wine that tastes Bierzo and stands as a great illustration of what a Mencía wine is about. This is a fresh wine that showcases perfectly the personality of the Mencía variety. It displays high aromatic intensity and a substantially complex palate. Good to accompany any dish.
