The Wine
Unanimous Santa Cruz 2019
In the Vineyard: Albillo Mayor vines are normally found in old vineyards, scattered among others of red varieties, which makes it necessary to visit many centenary-old vineyards to find them. These are vineyards at high altitude (830-910m), slowing the ripening process down and increases the production of flavor compounds in the skin that translate into high concentration and complexity in the must.
In the winery: Hand-harvested, the grapes are handled with extreme care to preserve them fresh until the fermentation stage. Light pressing without scrape and fermentation in oak barrels (65% of the production) and stainless steel tanks (35%), with ageing in new special Sylvain barrels with different toasts and extra fine grain for 11 months.
In the palate: Of a very faint straw yellow tone, this wine displays a wide range of fruit aromas (pineapple and grapefruit) representative of the Albillo variety, with a creamy background. Good acidity and intensity for a very elegant , complex and fresh wine that ends with a long bitter finish representative of the variety.

Jorge Arandilla takes this goal as a mission of life, transferring all his energy into managing centenary-old vineyards in a completely sustainable way, with minimum intervention but also highly respecting the traditions. Indeed, he has recovered a subterranean cellar that maintains in the exact manner it was done centuries ago, and disseminates the traditional viticultural and winemaking process to the public through his webpage. The effort results in outstanding wines that represent like no others the best Ribera del Duero has to offer.
