The Wine
Astobiza Rosé
In the Vineyard: A half and half coupage of Hondarrabi Beltza (black) and Hondarrabi Zuri (white) selected from special parcels operated under strict sustainable practices with natural cover crops and hand harvested.
In the winery: Produced as a white, with cold maceration before a gently pressing to extract a very fainted onion pink color and fermentation at low temperatures to preserve the fruit aromatics of the varieties.
In the palate: It displays a floral nose and an intense palate with citric and red fruit notes and clear mineral and salty notes. A nice aromatic finish for a rosé different from those traditional rosés produced in the rest of Spain.
